Khichdi needs no introduction in India. It has its roots all over India. Bajra Khichdi is mostly famous in Rajasthan & Gujarat is made from pearl millet and whole green moong dal along with the vegetables & spices. This khichdi is a great source of protein. A very easy one pot meal which can be enjoyed with the family during winter nights.
Bajra Moong Ki Khichdi
Ghee – 3 tbsp
Garlic – 1 tbsp (chopped)
Ginger – 1 inch (juliennes)
Bay leaf – 2 to 3
Black peeper – 1 tsp
Cumin seeds – 1 tsp
Green chilies – 3 to 4 (slit)
Onion – 1 large (sliced)
Carrot – 1 nos (cubes)
Cauliflower – 2oo Gms (florets)
Corn – 1 ¼ cup
Salt – to taste
Red chili powder – 1 ½ tsp
Turmeric powder – ½ tsp
Garam masala – 1 tsp
French beans – 4 to 5
Capsicum – ½ cup
Green moong dal – ¾ cup (soaked)
Bajra – 1 cup (soaked)
Chopped coriander – 2 tbsp
Water – 6 cups
Heat pressure cooker, add ghee, chopped garlic, ginger juliennes , bay leaf, black pepper corns , cumin seeds and sauté for about 2 minutes
Now add green chillies, onions mix well and sauté for about 3 to 4 minutes, add carrot, Cauliflower, corn and mix well and sauté.
Add salt, red chili powder, garam masala and sauté for about 2 minutes, now add French beans, capsicum, soaked moong dal and bajra.
Add 1 tbsp chopped coriander and reserve some for garnish add water ,close the pressure cooker and let it cook for atleast 30 to 35 minutes on medium flame .
Once done remove the cooker from the flame and let it rest for sometime, before opening
Release the steam, if there is still water cook for another 5 to 6 minutes, now serve in bowl, garnish with chopped coriander and ghee.
